This Polish tomato salad is the kind of recipe that proves simple is always better when the ingredients are good. Growing up, this was a summer staple ripe tomatoes, sliced onion, fresh parsley, and a creamy sour cream dressing that ties it all together.

You only need a handful of fresh ingredients to make this salad shine. The key is using the ripest, most flavorful tomatoes you can find - heirloom varieties are perfect here.

Instructions
Step 1: Make the dressing.
In a large bowl, whisk together the sour cream, lemon juice, salt and pepper until smooth and combined. Taste and adjust seasoning as needed.
Step 2: Prep the tomatoes.
Slice the heirloom tomatoes into thick rounds or wedges. Season lightly with salt and let them sit for a few minutes to draw out some of their natural juices.
Step 3: Slice the onion.
Thinly slice the white onion. If you find raw onion too sharp, soak the slices in cold water for 5-10 minutes and pat dry before adding.
Step 4: Assemble.
Add the tomatoes and onion to the bowl with the dressing and gently toss to coat. Finish with freshly chopped parsley.
Step 5: Serve.
Serve immediately or let it rest for 10 minutes to let the flavors come together. Best enjoyed at room temperature.

- Sour cream: Greek yogurt works as a 1:1 swap for a lighter version
- Lemon juice: white wine vinegar or apple cider vinegar can be used in a pinch
