This Garlic Bread Zapiekanka is my game day version. I start with a crispy garlic butter base, then load it up with seasoned shredded chicken, golden sautéed mushrooms and onions, and plenty of melty mozzarella. It's hearty, packed with protein, easy to slice and share, and it disappears from the coffee table faster than anything else I put out.
The secret to a great zapiekanka is texture. Toasting the garlic bread before the toppings go on keeps it crisp instead of soggy, and letting the mushrooms brown without too much stirring gives you that deep, savory flavor that makes the classic version so addictive.

Ingredients
Everything here is easy to find at a regular grocery store. A soft Italian loaf gives you a sturdy but tender base, two kinds of mushrooms add more depth than one, and dried marjoram is the herb that makes this taste truly Polish. Don't skip the ketchup drizzle; in Poland, it's non-negotiable!
For the garlic bread
- Italian loaf - halved crosswise and split lengthwise
- Unsalted butter - softened so it spreads easily
- Garlic cloves - grated for the smoothest garlic butter
- Fresh parsley - finely chopped
For the chicken
- Boneless skinless chicken breast
- Garlic powder
- Smoked paprika - adds a subtle, smoky warmth
- Kosher salt - divided between the chicken and mushrooms
- Olive oil - divided
For the mushrooms and onion
- Button mushrooms - sliced
- Shiitake mushrooms - stems removed, sliced
- Yellow onion - diced
- Butter
- Dried marjoram - the classic Polish herb
- Black pepper
For topping
- Shredded mozzarella
- Ketchup - for the signature zigzag drizzle
- Chives or green onion - chopped
See the recipe card below for exact quantities.
Instructions
Step 1: Make the garlic butter. Heat the oven to 425°F. Mix the softened butter, grated garlic, parsley and a pinch of salt. Spread it over the cut sides of the bread and place the bread on a sheet pan.
Step 2: Toast the bread. Toast until the edges are golden and lightly crisp. This step keeps the bread from going soggy under all those toppings.
Step 3: Cook the chicken. Season the chicken with garlic powder, smoked paprika and half of the salt. Sear in half of the olive oil over medium-high heat, 5 to 6 minutes per side, until it reaches 165°F. Rest for 5 minutes, then shred with two forks.
Step 4: Sauté the mushrooms and onion. In the same pan, add the remaining olive oil and the butter. Add both kinds of mushrooms and the onion and cook over medium-high heat, stirring only occasionally, until golden and the liquid has cooked off. Season with marjoram, black pepper and the remaining salt.
Step 5: Load it up. Toss the shredded chicken with the mushroom mixture. Pile it onto the toasted garlic bread, then cover with the mozzarella.
Step 6: Bake. Bake until the cheese is melted and bubbly. Broil for the last minute for extra color, watching closely so it doesn't burn.
Step 7: Drizzle and serve. Zigzag the ketchup across the top, sprinkle with chives or green onion, and slice into pieces.
Tip: For the cleanest ketchup zigzag, put the ketchup in a squeeze bottle or a zip-top bag with a tiny corner snipped off. And searing the chicken in the same pan before the mushrooms builds extra flavor, so don't wipe it out!
Substitutions
- Bread: A French baguette is the most traditional choice for zapiekanka. Ciabatta or hoagie rolls also work well.
- Chicken: Use boneless skinless chicken thighs for juicier meat, or save time with shredded rotisserie chicken.
- Mushrooms: Cremini, oyster or all button mushrooms work great. Use whatever you have on hand.
- Cheese: Swap mozzarella for Gouda, Havarti or a mild white cheddar. For a more authentic Polish flavor, try a Polish cheese like Gouda-style ser żółty.
- Marjoram: If you can't find it, use dried oregano or thyme.
- Butter: Salted butter works too; just skip the pinch of salt in the garlic butter.
Variations
- Classic zapiekanka: Skip the chicken and keep it simple with just mushrooms, onions and cheese, the way it's served in Kraków.
- Kielbasa zapiekanka: Swap the chicken for sliced, browned kielbasa for a smoky, extra-Polish twist.
- Buffalo chicken: Toss the shredded chicken in buffalo sauce and finish with a ranch drizzle instead of ketchup for the ultimate game day mash-up.
- Spicy: Add sliced jalapeños or a pinch of red pepper flakes before baking, or swap the ketchup for sriracha ketchup.
- Mini zapiekanki: Use small rolls or sliced baguette rounds to make bite-sized party appetizers.
Equipment
- Rimmed sheet pan - for toasting and baking the bread
- Large skillet - for searing the chicken and sautéing the mushrooms in the same pan
- Microplane or fine grater - for grating the garlic
- Instant-read thermometer - to make sure the chicken reaches 165°F
- Squeeze bottle or zip-top bag - for a neat ketchup drizzle
- Serrated bread knife - for splitting the loaf and slicing to serve
Storage
Refrigerator: Store leftovers in an airtight container in the fridge for up to 3 days.
Reheating: Reheat in a 375°F oven or air fryer for 5 to 8 minutes, until the cheese is melty and the bread crisps back up. Avoid the microwave, which makes the bread chewy.
Make ahead: Cook the chicken and the mushroom mixture up to 2 days ahead and refrigerate. On game day, just toast the garlic bread, load it up, and bake. You can also freeze the chicken and mushroom filling for up to 3 months; thaw overnight in the fridge before using.
