Polish Tomato Salad | Sałatka z Pomidorów
A simple, creamy Polish summer salad that lets ripe heirloom tomatoes shine. The salted tomato juice thins the dressing naturally for the perfect consistency.

- 4 Heirloom tomatoes
- 1 White Onion, thinly sliced
- ⅓ cup Fresh Parsley, chopped
- ⅔ cup Sour Cream
- 2 tablespoon Lemon Juice
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
Salt the tomatoes: Slice 4 heirloom tomatoes into thick rounds or wedges and arrange on a cutting board or plate. Season generously with salt and let sit for 10 minutes to draw out their natural juices.
Make the dressing: In a large bowl, whisk together sour cream, lemon juice, black pepper, and a pinch of salt (plus more for tomatoes). Add a splash of the reserved tomato juice from the salted tomatoes and whisk to combine. Taste and adjust seasoning.
Prep the onion: Thinly slice 1 white onion, thinly sliced. For a milder flavor, soak slices in cold water for 5 minutes and pat dry before using.
Assemble: Add the tomatoes and onion to the bowl with the dressing and gently toss to coat. Finish with fresh parsley.
Serve: Serve immediately at room temperature for best flavor.
