Equipment

  • 1 Large Bowl
  • 1 Cutting board
  • 1 Knife
  • 1 Whisk

Ingredients

  • 4 Heirloom tomatoes
  • 1 White Onion, thinly sliced
  • cup Fresh Parsley, chopped
  • cup Sour Cream
  • 2 tablespoon Lemon Juice
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper

Instructions

  • Salt the tomatoes: Slice 4 heirloom tomatoes into thick rounds or wedges and arrange on a cutting board or plate. Season generously with salt and let sit for 10 minutes to draw out their natural juices.
  • Make the dressing: In a large bowl, whisk together sour cream,  lemon juice, black pepper, and a pinch of salt (plus more for tomatoes). Add a splash of the reserved tomato juice from the salted tomatoes and whisk to combine. Taste and adjust seasoning.
  • Prep the onion: Thinly slice 1 white onion, thinly sliced. For a milder flavor, soak slices in cold water for 5 minutes and pat dry before using.
  • Assemble: Add the tomatoes and onion to the bowl with the dressing and gently toss to coat. Finish with fresh parsley.
  • Serve: Serve immediately at room temperature for best flavor.
