These pancakes are so easy to make! Everything goes right into the blender - oats, banana, eggs - and what you get is a soft, naturally sweet pancake with a hearty texture that actually keeps you full. No refined flour, no complicated steps. Just a stack you can feel good about serving, whether it's a slow Sunday or a quick school morning.
And when you top them with warm apples or a spoonful of Greek yogurt? That's where it really feels like something special.

Substitutions
Use what works for your kitchen - this recipe is very forgiving:
- Swap banana with unsweetened applesauce or pumpkin puree
- Use dairy milk, almond milk, oat milk, or whatever you prefer
- Replace maple syrup with honey if needed
- Use egg whites in place of whole eggs if that's what you have
- Baking soda can work in place of baking powder (just use a smaller amount)
Variations
This recipe is a great base - you can take it in a few different directions depending on what you have on hand:
- Add cinnamon or pumpkin spice for a cozy flavor
- Toss in blueberries or chopped strawberries right into the batter
- Stir in a scoop of protein powder for an extra boost
- Add a spoonful of nut butter to the blender for richness
- Make them mini-sized for kids or easy meal prep

- Blender
- Nonstick skillet or griddle
- Spatula
- Measuring cups and spoons
Storage
Store the wet ingredients (lettuce, tomato, onion) separately from the dry ingredients (buns) in the fridge, and recombine when ready. Good for 2-3 days.
