Cucumber, Tomato & Feta Salad with Dill

There's a version of this salad on every corner of the internet right now cucumber, tomato, feta, a little onion, a glug of olive oil.

Growing up, vinegar and brine did a lot of heavy lifting in our kitchen.So instead of just oil and salt, this one gets a splash of apple cider vinegar and a little pickle brine (yes, the brine from a jar of pickled banana peppers works beautifully here) for a dressing with real backbone. Spring onion keeps things mild and grassy instead of sharp, and a heavy hand with fresh dill ties it all together.

It's a five-minute salad. No cooking!

Ingredients

  • Cucumbers
  • Tomatoes
  • Feta
  • Spring Onions
  • Dill
  • Olive Oil
  • Apple Cider Vinegar
  • Pickle Brine
  • Salt and pepper
  • A pinch of garlic powder

Instructions

  1. Combine the cucumbers, tomatoes, spring onion, and dill in a large bowl.
  2. In a small bowl or jar, whisk together the olive oil, apple cider vinegar, and pickle brine.
  3. Pour the dressing over the vegetables and toss gently.
  4. Add the feta last, folding it in gently so it doesn't break apart too much.
  5. Season with salt, pepper, and garlic powder to taste. Taste and adjust the vinegar or brine if you want more tang.
  6. Let it sit for 5-10 minutes before serving if you can - it gives the dressing time to mingle.

Notes

  • The brine is the move. A straight oil-and-vinegar dressing is fine, but pickle brine gives this salad a little more personality.
  • Make it a meal. This salad is great piled onto toasted rye, or served alongside grilled kielbasa or chicken.
  • Make ahead friendly. The flavors deepen as it sits in the fridge, so this is a great one to prep a few hours before serving.

  • ½ cup Feta, crumbled
  • 3 Spring Onions, thinly sliced
  • 2 tablespoon Fresh Dill, chopped
  • 2 tablespoon Olive Oil
  • 1 tablespoon Apple Cider Vinegar
  • 1 tablespoon Pickle brine or banana pepper brine
  • Salt + Pepper to Taste
  • 1 pinch Garlic powder
