Maple Oat Pancakes

Instructions

  1. Add oats, banana, eggs, milk, baking powder, and maple syrup to a blender
  2. Blend until smooth and pourable
  3. Heat a nonstick or lightly greased skillet over medium heat
  4. Pour small rounds of batter onto the skillet
  5. Cook for about 2-3 minutes, until bubbles form and edges set
  6. Flip and cook another 2-3 minutes until golden and cooked through
  7. Serve warm with your favorite toppings

Substitutions

Use what works for your kitchen - this recipe is very forgiving:

  • Swap banana with unsweetened applesauce or pumpkin puree
  • Use dairy milk, almond milk, oat milk, or whatever you prefer
  • Replace maple syrup with honey if needed
  • Use egg whites in place of whole eggs if that's what you have
  • Baking soda can work in place of baking powder (just use a smaller amount)
