Cucumber, Tomato & Feta Salad with Dill

Five minute no cook summer salad! Great side with any piece of grilled meat

  • 1 Large Bowl
  • 1 Sharp knife

Ingredients
  

  • 2 Cucumbers, sliced or chopped
  • 15 Cherry Tomatoes, sliced in half
  • ½ cup Feta, crumbled
  • 3 Spring Onions, thinly sliced
  • 2 tablespoon Fresh Dill, chopped
  • 2 tablespoon Olive Oil
  • 1 tablespoon Apple Cider Vinegar
  • 1 tablespoon Pickle brine or banana pepper brine
  • Salt + Pepper to Taste
  • 1 pinch Garlic powder

Instructions
 

  • Combine the cucumbers, tomatoes, spring onion, and dill in a large bowl.
  • In a small bowl or jar, whisk together the olive oil, apple cider vinegar, and pickle brine.
  • Pour the dressing over the vegetables and toss gently.
  • Add the feta last, folding it in gently so it doesn't break apart too much.
  • Season with salt, pepper, and garlic powder to taste. Adjust as needed.
  • Let it sit 5–10 minutes before serving so the dressing can mingle.
