This isn't your basic avocado toast. - Sourdough bread
- Ripe avocado
- Cottage cheese
- Roasted red pepper (jarred)
- Fresh basil leaves
- Flaky sea salt
- Black pepper Red pepper flakes (optional)

Instructions
- Toast your sourdough Get your sourdough slices into the toaster or onto a hot skillet until they're deeply golden and crispy at the edges.
- Mash the avocado Halve your avocado, remove the pit, and scoop the flesh into a small bowl. Mash with a fork to your preferred texture
- Layer on the cottage cheese Spread a generous spoonful of cottage cheese directly onto your warm toast.
- Add the avocado Spoon your mashed avocado over the cottage cheese layer and spread it out to the edges.
- Top it off Layer on slices or strips of roasted red pepper. Tear fresh basil leaves over the top. Finish with a pinch of flaky salt, fresh black pepper, and red pepper flakes if you like a little heat or honey!
- Serve immediately and eat over the sink like my dad always did, or plate it up nicely. Either way, it's delicious.
Variations
The beauty of this recipe is how easy it is to riff on. Here are a few of my favorites:
- Add an egg: A jammy soft-boiled egg or a fried egg on top turns this into a full, protein-packed breakfast.
- Swap the bread: Sourdough is my first choice for flavor and structure, but a thick-cut whole grain or seeded loaf works beautifully too.
- Make it spicy: A drizzle of hot honey or a swipe of chili crisp underneath the avocado adds serious heat in the best way.
- Go dairy-free: Skip the cottage cheese and double down on the avocado, or swap in a good whipped dairy-free cream cheese.
- Add crunch: A handful of microgreens, toasted pepitas, or even crushed walnuts on top brings a great textural contrast.
