Grilled Kielbasa Sandwich with Caramelized Onions and Whole Grain Mustard

If you've never thrown a kielbasa link on the grill and stuffed it into a hoagie roll, you are genuinely missing out and I say that with all the love in the world. This grilled kielbasa sandwich is one of those recipes that sounds almost too simple to be good, and then you take one bite and completely understand.

This is my go-to for busy summer evenings when I want something satisfying without spending an hour in the kitchen. It comes together fast, it feeds a crowd, and every single person who tries it asks for the recipe.   • Hoagie rolls
  • Yellow onion
  • Butter
  • Whole grain mustard
  • Salt and black pepper

Instructions

  1. Start with the caramelized onion, they take the longest and are absolutely worth it. Heat a skillet over medium heat, add a generous pat of butter, and toss in your thinly sliced onions with a pinch of salt. Cook low and slow, stirring occasionally, for about 20 minutes until they are deeply golden, sweet, and jammy. Do not rush this step.
  2. While the onions cook, preheat your grill or grill pan to medium-high heat. Score the kielbasa links with a few shallow diagonal cuts on each side - this helps them cook evenly and gives you gorgeous grill marks.
  3. Grill the kielbasa for 4 to 5 minutes per side until nicely charred on the outside and heated all the way through.
  4. In the last couple of minutes, place your hoagie rolls cut-side down on the grill and toast until lightly golden.
  5. Spread whole grain mustard generously on the toasted rolls, nestle in a grilled kielbasa link, and pile on those caramelized onions. Serve immediately.

Variations & Substitutions

This sandwich is endlessly riffable - here are some of my favorite ways to switch it up:

  • Add cheese: A slice of melted gruyere, provolone, or sharp cheddar draped over the kielbasa right before it comes off the grill takes this sandwich to another level.
  • Try a different mustard: Dijon, spicy brown, or even honey mustard all work beautifully here depending on your mood.
  • Add sauerkraut: For a more traditional Polish-inspired sandwich, pile on some tangy sauerkraut alongside the caramelized onions. The contrast is incredible.
  • No grill? Use a cast iron grill pan on the stovetop for the same char marks and smoky flavor indoors.
  • Make it a platter: Skip the roll entirely and serve the grilled kielbasa sliced alongside the caramelized onions, a whole grain mustard dip, and crusty bread for an easy appetizer spread.
  • Add pickles: A few bread and butter pickles or pickled jalapeños tucked into the sandwich add a bright, acidic punch that balances the richness perfectly.

Tips
