Ingredients
  

  • 1 Butternut Squash, cubed
  • 1 lb Brussels sprouts, halved
  • 1 Red onion, sliced
  • 2 tbsp Olive Oil
  • salt + pepper
  • 4 Salmon fillets
  • 1 tablespoon Garam masala
  • 2 cups cooked rice
  • 4 cups Baby Organic Kale

Method
 

  1. Preheat oven to 400°F and line sheet pans with parchment.
  2. Toss vegetables with olive oil, salt, and pepper. Roast 25–30 minutes, stirring halfway.
  3. Season salmon with spices and roast on a separate pan for 12–15 minutes.
  4. Assemble bowls with rice, greens, roasted vegetables, and salmon.
  5. Serve or store for meal prep.
