Roasted Veggie & Spiced Salmon Bowls
A simple, nourishing bowl made with caramelized roasted vegetables, warm spiced salmon, fluffy rice, and fresh greens. Perfect for meal prep or an easy, balanced weeknight meal.

- 1 Butternut Squash, cubed
- 1 lb Brussels sprouts, halved
- 1 Red onion, sliced
- 2 tbsp Olive Oil
- salt + pepper
- 4 Salmon fillets
- 1 tablespoon Garam masala
- 2 cups cooked rice
- 4 cups Baby Organic Kale
Preheat oven to 400°F and line sheet pans with parchment.
Toss vegetables with olive oil, salt, and pepper. Roast 25–30 minutes, stirring halfway.
Season salmon with spices and roast on a separate pan for 12–15 minutes.
Assemble bowls with rice, greens, roasted vegetables, and salmon.
