Ingredients
  

  • 1 lb Italian turkey sausage, browned
  • 6 whole eggs
  • 1 ½ cups liquid egg whites
  • 1 cup cooked garbanzo beans
  • 1 green pepper, chopped
  • 1 tomato, chopped
  • 1 cups spinach, chopped
  • ¼ cup Parmesan Cheese
  • 1 teaspoon Italian seasoning
  • salt + pepper

Instructions
 

  • Preheat oven to 375°F and grease a 9x13-inch baking dish.
  • Brown sausage in a skillet; set aside.
  • Whisk eggs and egg whites in a large bowl.
  • Stir in beans, vegetables, spinach, sausage, and seasoning.
  • Pour into baking dish and top with Parmesan.
  • Bake 30–35 minutes until set.
  • Cool slightly, slice, and serve.
