- 1 lb Italian turkey sausage, browned
- 6 whole eggs
- 1 ½ cups liquid egg whites
- 1 cup cooked garbanzo beans
- 1 green pepper, chopped
- 1 tomato, chopped
- 1 cups spinach, chopped
- ¼ cup Parmesan Cheese
- 1 teaspoon Italian seasoning
- salt + pepper
Preheat oven to 375°F and grease a 9x13-inch baking dish.
Brown sausage in a skillet; set aside.
Whisk eggs and egg whites in a large bowl.
Stir in beans, vegetables, spinach, sausage, and seasoning.
Pour into baking dish and top with Parmesan.
Bake 30–35 minutes until set.
Cool slightly, slice, and serve.
