Ingredients
  

  • 1 lb Italian turkey sausage, browned
  • 6 whole eggs
  • 1 ½ cups liquid egg whites
  • 1 cup cooked garbanzo beans
  • 1 green pepper, chopped
  • 1 tomato, chopped
  • 1 cups spinach, chopped
  • ¼ cup Parmesan Cheese
  • 1 teaspoon Italian seasoning
  • salt + pepper

Method
 

  1. Preheat oven to 375°F and grease a 9x13-inch baking dish.
  2. Brown sausage in a skillet; set aside.
  3. Whisk eggs and egg whites in a large bowl.
  4. Stir in beans, vegetables, spinach, sausage, and seasoning.
  5. Pour into baking dish and top with Parmesan.
  6. Bake 30–35 minutes until set.
  7. Cool slightly, slice, and serve.
