Crispy Cod Brioche Sandwich with Carrot Slaw

Ingredients
  

  • 2 cod fillets
  • salt and pepper
  • ¼ cup potato startch
  • 4 tablespoon olive oil
  • 2 brioche buns
  • 1 cup shredded organic rainbow carrots
  • 2 tablespoon lemon juice
  • 3 tablespoon mayo
  • 1 teaspoon dijon mustard
  • 1 teaspoon lemon juice
  • Dash hot sauce

Method
 

  1. Toss shredded carrots with lemon juice, salt and pepper
  2. Mix sauce ingredients
  3. Pat cod dry, season, lightly coat in potato startch
  4. Pan-fry in olive oil (medium heat) 3 to 4 minutes per side until golden
  5. Toast buns in butter
  6. Build the sandwich
