- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 yellow onion, diced
- 2 cloves garlic, minced
- 1 poblano pepper, diced
- 1 large head cauliflower, chopped
- 3 cups chicken of vegetable broth
- 1 cup milk
- 1 ½ cups shredded sharp cheddar
- salt + pepper
Heat butter and olive oil in a large pot. Sauté onion until soft.
Add garlic and poblano; cook until fragrant.
Add cauliflower and broth. Simmer until cauliflower is tender.
