- Preheat oven to 400°F. Toss cauliflower with olive oil, salt, and pepper. Roast for 25 minutes until golden.
- Prepare edamame and hard-boiled eggs.
- Season and slice chicken with salt, and pepper
- Blend ranch and chipotle peppers until smooth.
- Assemble bowls with greens, cauliflower, chicken, edamame, peppers, avocado, mozzarella, and eggs.
- Top with pepitas and drizzle with chipotle ranch.
