Copycat Zupa’s Power Bowl

Ingredients
  

  • 1 small head cauliflower, cut into florets
  • 2 tablespoon olive oil
  • 1 Lb chicken breast, cubed
  • 1 cup edamame, shelled
  • 4 eggs, hard boiled and halved
  • 1 cup baby sweet peppers, sliced
  • 4 cups mixed greens
  • 2 avocados, sliced
  • 1 cup mozzarella, shredded
  • ¼ cup pepitas
  • ¾ cup Primal ranch dressing
  • 2 Chipotle Peppers in adobo

Method
 

  1. Preheat oven to 400°F. Toss cauliflower with olive oil, salt, and pepper. Roast for 25 minutes until golden.
  2. Prepare edamame and hard-boiled eggs.
  3. Season and slice chicken with salt, and pepper
  4. Blend ranch and chipotle peppers until smooth.
  5. Assemble bowls with greens, cauliflower, chicken, edamame, peppers, avocado, mozzarella, and eggs.
  6. Top with pepitas and drizzle with chipotle ranch.
