Ingredients
  

  • 1 small head cauliflower, cut into florets
  • 2 tablespoon olive oil
  • 1 Lb chicken breast, cubed
  • 1 cup edamame, shelled
  • 4 eggs, hard boiled and halved
  • 1 cup baby sweet peppers, sliced
  • 4 cups mixed greens
  • 2 avocados, sliced
  • 1 cup mozzarella, shredded
  • ¼ cup pepitas
  • ¾ cup Primal ranch dressing
  • 2 Chipotle Peppers in adobo

Instructions
 

  • Preheat oven to 400°F. Toss cauliflower with olive oil, salt, and pepper. Roast for 25 minutes until golden.
  • Prepare edamame and hard-boiled eggs.
  • Season and slice chicken with salt, and pepper
  • Blend ranch and chipotle peppers until smooth.
  • Assemble bowls with greens, cauliflower, chicken, edamame, peppers, avocado, mozzarella, and eggs.
  • Top with pepitas and drizzle with chipotle ranch.
