Preheat & arrange bottoms: Preheat the oven to 350°F. Arrange the bottom halves of 9 Hawaiian rolls, pre-sliced (1 pack of 9) snugly in a 9x9 baking dish or on a parchment-lined pan, keeping them touching.
Jam, turkey, cheese: Spread the Profanity Jam Berry Habanero jam across the bottom halves. Layer on the sliced deli turkey, folding slices to fit, then cover with 6 provolone cheese slices, tearing pieces as needed for even coverage.
Onions & tops: Scatter prepared pickled red onions, drained over the cheese. Spread the remaining jam on the cut sides of the top halves and set them in place.
Butter, poppy seeds, cover: Brush unsalted butter, melted over the tops and sprinkle with 1 teaspoons poppy seeds. Cover tightly with foil.
Bake covered: Bake covered at 350°F for 15 minutes until the cheese is melted and everything is heated through.
Uncover & brown: Remove the foil and bake 5 more minutes, until the tops are golden and glossy. Watch the edges, the jam can caramelize quickly.
Rest & serve: Rest 5 minutes, then serve warm.
