Caramelized Banana Matcha Latte

Here is what you'll need:

  • Ripe banana
  • Cane sugar
  • Butter
  • Pinch of cinnamon
  • Oat milk
  • Matcha powder
  • Hot water (about 175°F)
  • Ice
  • Extra oat milk (for frothing)

Instructions

  1. Caramelize the Bananas. Slice your ripe banana into coins. Melt butter in a small pan over medium heat, then add the cane sugar and cinnamon. Once it starts to bubble, add the banana slices and cook for about 2-3 minutes per side until they're deeply golden and caramelized. Set aside a few of the prettiest slices for your garnish - the rest are going into the blender.
  2. Make the Banana Oat Milk: Add the caramelized bananas to your blender along with the oat milk, vanilla extract, and - this is non-negotiable - every last drop of that syrupy pan liquid. It's where all the flavor and color lives. Blend until completely smooth and creamy. You'll notice the milk takes on a gorgeous warm golden hue. That's your sign you did it right.
  3. Whisk the Matcha: Add matcha powder to a small bowl or cup with the hot water. Froth with your electric frother for 20-30 seconds until the matcha is fully dissolved and slightly foamy.
  4. Build Your Layers Add your ice, then slowly pour the banana oat milk over the top.
  5. Pour the Matcha: Slowly pour the matcha over the back of a spoon so it cascades gently onto the banana oat milk and creates a distinct, floating layer. Watch it bloom down through the glass.
  6. Finish: Froth the extra oat milk with your electric frother for 30-45 seconds until it's light, airy, and pillowy. Nestle in your reserved caramelized banana slices. Serve immediately.

Substitutions & Variations

Here are some vartiations:

  • Dairy-free butter: Absolutely. Vegan butter works just as well for caramelizing the bananas and you won't lose any of that richness.
  • Different milk: Oat milk is ideal here because it blends silky-smooth and has a natural sweetness that plays well with the banana. Full-fat coconut milk would be a decadent swap. Regular milk works too, though the color won't be quite as golden.
  • Want it sweeter: Add a drizzle of honey or maple syrup to the banana oat milk before blending. The riper your banana, the less you'll need.
  • Want it warm: Skip the ice and gently heat the blended banana oat milk on the stovetop. Pour the matcha on top and finish with steamed foam instead of cold froth. A completely different vibe, equally delicious.
  • Add protein: A scoop of vanilla protein powder blended into the banana oat milk makes this a genuinely solid breakfast.

You don't need anything to special to make this! Here is what you'll need:

  • Electric milk frother: the hero of this recipe. Does double duty: whisking the matcha smooth and frothing the oat milk cold foam. If you don't have one yet, it's one of the most worthwhile $10-15 kitchen purchases you'll make.
  • Blender: for the banana oat milk. A personal blender like a NutriBullet works perfectly.
  • Small saucepan or skillet: for caramelizing the bananas. Non-stick makes cleanup easier.
  • A tall, clear glass: because the whole point of this drink is the layers. A wide-mouth glass or a classic iced coffee glass shows them off best.
  • A spoon: for the matcha pour technique. The back of a regular spoon is all you need to slow the pour and protect those layers.

  • 1 cup Ice

Method
 

  1. Caramelize the bananas: Slice 1 ripe banana into coins. Melt 1 teaspoons butter in a small pan over medium heat, add 1 tablespoons cane sugar and 1 pinch of cinnamon, then add banana slices. Cook until golden and caramelized, about 2-3 minutes per side. Reserve a few slices for garnish and set aside.
  2. Make the banana oat milk: Add most of the caramelized bananas (and any syrupy pan liquid!) to a blender with 1 cups oat milk and 0.3 teaspoons vanilla extract. Blend until smooth and creamy. The pan liquid gives your milk that gorgeous golden color.
  3. Whisk the matcha: Add 1 teaspoons Habit matcha powder to a small bowl or cup with 2 tablespoons hot water (about 175°F). (If making two lattes double this) Froth with your electric frother for 20-30 seconds until smooth, combined, and slightly foamy. Set aside.
  4. Build your layers: Add 1 cups ice, then slowly pour the banana oat milk over the ice.
  5. Pour the matcha: Slowly pour the matcha over the back of a spoon on top of the banana oat milk to create a distinct layer.
  6. Froth extra oat milk for topping if desired.
